Destemmed maceration and 2 years of barrel aging. This grape variety is very common in Canada. Vineyards are over 50 years old. This wine is somewhat reminiscent of Burgundy Pinot Noirs, but with more spice. The palate is rounded and delicious, with a peppery finish. Amazing!


DOMAIN

For the past ten years, Pierre Paillot (trained as a sommelier) has taken over a vineyard dating back to 1943 located in the locality of Les Monts Chevreau. Quietly, but through hard work, trial, and error, he has single-handedly revived viticulture in Noyers. The professional is based in the commune with a very small estate, a little over twenty ares in total. His dream is to reach two hectares. Today, he produces natural red, white, and orange wines without any sulfites in either the cultivation or the vinification. A quality product. His first real vintage is a success. Guests of Maison Paillot, and especially the restaurant that accompanies it, are sure to discover it.
