The Canailles estate is located in Ternand in the south of Beaujolais, in the “golden stones” sector just 30 km northwest of Lyon. The 8 hectares of vines have been cultivated organically since 2005 and biodynamically since the vines were taken over in 2019 by Simon Pérot. They are all located on granite soils between 450 and 550 meters above sea level. The vines, grown biodynamically, are all on granite soils. The vinifications are done with respect for the grapes. We use indigenous yeasts naturally present on the skin of the grapes and which allow alcoholic fermentation. We do not do any filtration or fining. A tiny amount of sulfur is added if necessary.
