Defaix's Chablis 1er Cru Côte de Léchet is distinguished by aromas of honey, ripe fruit, apricot, spices, and dried white flowers. It is powerful, full-bodied, with a satiny texture, and offers a lovely saline liveliness. The finish is marked by a delicate hint of hazelnut.
This wine perfectly reflects the minerality of its steep slope, combining length and power, characteristics of an exceptional vintage. The ripeness of the fruit, very present, is balanced by the minerality of the terroir, avoiding the excess richness that one might find in wines from the Côte d'Or.
DOMAIN
Daniel-Etienne Defaix is one of the oldest estate owners in Chablis, with a history spanning eight centuries for the Vieux Château. For four generations, the Defaix family has passed down their winemaking expertise from father to son.
The family estate is located on the oldest terroirs of Chablis, where, a thousand years ago, the monks of Pontigny made their selection to give the Chablis appellation its nobility. Today, Daniel-Etienne Defaix perpetuates this centuries-old winemaking tradition within these great monastic appellations. Vineyard work is carried out in the traditional manner, as a clean and healthy vineyard is essential for producing quality grapes, and therefore exceptional wines.
The estate covers 28 hectares, mainly planted with Chardonnay, on a typical soil known as "Kimmeridgian", composed of clay-limestone marl from the Upper Jurassic, with numerous small fossilized oysters.
The monks of Pontigny favored hillsides with a good southeast exposure, which was an asset for Chablis, a vineyard prone to spring frosts. This exposure allowed them to benefit from the first rays of sunshine, thus reducing crop losses.
Daniel-Etienne Defaix produces his wines with the greatest respect for family tradition.
