The nose develops a complex aromatic palette: citrus, peach, fresh bread. The charmeuse palate is round and elegant, with a beautiful mineral liveliness. A treat of pleasure... but not so simple!
They cultivate several small plots in the heights of Hautes-Côtes, at more than 400 meters above sea level, assembled to create this wine. Its complexity therefore comes from a great diversity of soils, marl and clay on limestone slabs. They have the privilege of having old mass selections of the Aligoté grape variety known as golden. Not very productive and offering very good maturity, the old vines always give this wine fruity notes very complementary to its natural liveliness.

DOMAIN

Boris Champy is enthusiastic and believes in the future of the Hautes-Côtes, in particular thanks to their altitude in a context of global warming. With neighboring winegrowers, he wishes to continue to raise the reputation of the wines of this superb, little-known wine region. The objective of Domaine Boris Champy is simple: to highlight the localities, highlight the microclimates, the different exposures and other exciting subtleties.

At altitude, in the hills and valleys of the Hautes-Côtes, Boris practices viticulture that is a little different from that of the main wine-growing coast. The plots are islands of biodiversity with multiple enclosures but also trees, living hedges, walls and meurgers, fruit trees... Boris knows that we must have a holistic approach, that of a global ecosystem in agroecology, intimately eco-friendly.

The Estate is one of the few pioneers of organic and biodynamic farming in Burgundy, certified by Ecocert and Demeter.
