Produced from Aligoté grapes in purity. Alcoholic fermentation is done with native yeasts in barrels. It is then refined for 10 months.
Maxime Crotet, originally from the Pays Beaunois, has always been immersed in the world of wine. His grandfather actually ran the Hostellerie de Levernois! Maxime quickly wanted to know more and was particularly interested in winemaking. It was with Frédéric Cossard that he trained. Maxime learned the management of vines in organic farming, as well as the mastery of breeding sulfur-free wines, now called “Natural Wines”. He stayed there for about ten years. Maxime then wanted to create his own business and make his own wines. The adventure begins at the beginning of 2021 where he works to find a vat room. By chance he found some in Beaune itself, the first stage of a meteoric rise. He first looked for organic grapes in the Southern Rhône. The 2021 vintage being catastrophic in Burgundy, Maxime still managed to have some Pinot Noir from Côte de Nuits.
