Robust and ample, with a long finish on the palate, this wine is the fruit of several grape varieties, each bringing a part of its personality to the wine.
The Grenache brings a fruity touch, the Cinsault contributes to the finesse of the wine, the Carignan gives it its acidity while the Mourvèdre grape variety gives the backbone and its structure to the wine.
All these grape varieties combined create a general harmony of red Bandol.
The vines are 40 to 60 years old.
Each plot is harvested by hand, then vinified separately in vats, without adding yeast since the grapes naturally have yeast on the skin of the grape: the bloom.
When fermentation is finished, the wines will be stored in our tuns (large barrels of 25 to 60 HL) for a period of 18 months.
Bottling is carried out in the cellar, in one go, allowing you to be assured of the same wine, from the first to the last bottle.
It will not be filtered because they want to keep all the aromas of the fruit, a slight deposit may occur after a few years, a guarantee of the natural side of these wines.
Made from native yeasts, this wine is neither filtered nor fined .

Man and his Domain: Alain Pascal
“ Since I was young, I dreamed of being a farmer.
Being as close as possible to nature and enjoying this freedom.
Convinced that when I grow up, perhaps one day, I will have the opportunity to make my own wine. »
At the age of 20, he left for military service.
It was then that his neighbor entrusted his farm to his father, Honoré Pascal.
He told her: “ One day, when you can, you will buy it for me .”
And 10 years later he was able to do it.
It was his passion for old stones that gave him the desire to build the cellar, with the help of his brother Guy and his cousin Christian in 1995.
And it is in homage to his father Honoré that he chose to call him Gros Noré, this nickname that the inhabitants of the village gave him.
A few years later, as the operation expanded, he built a new building which allowed him to receive his customers and let them taste his wines in this reception room.
And since then a new aging cellar has been created, integrated into the entire property.
The terroir and its wines
All the vines are planted on the northern slopes of the village of Cadière d'Azur, an asset for the Domaine which is attentive to the maturity of each bunch of grapes, on clay soils.
The Domaine, which is part of the Bandol Appellation, extends over an area of 19 hectares,
The vines are swept by the Mistral, bringing relative humidity to the foliage with its spray, and drying the land. The grapes benefit from an exceptional health condition.
The proximity of the sea gives a salty side to the wines as well as a certain liveliness. Some plots even have a view of the Mediterranean and the Gulf of La Ciotat.
There, Mourvèdre is King and makes Bandol wines unique.
No weedkillers or chemicals (insecticides) have been used for many years, the Estate is certified organic.
The philosophy is to work as the ancients did!
The harvest is entirely done by hand, the grapes are checked bunch by bunch, in order to check the maturity of the grapes.
He pays great attention to his vines by plowing them several times a year in spring, which brings great freshness and finesse to the wines and contributes to their balance.
