THE Hatzidakis Santorini Familia is a fine example of the work of Domaine Hatzidakis! The grapes for this wine come from vineyards the family owns throughout the island. The vineyards are located between 200 and 300 meters above sea level on volcanic igneous lava soils. Respectful agriculture is practiced there with a limited yield and the harvest is carried out manually at the optimal time of maturation.
In the cellars, the Hatzidakis Santorini Familia grapes spend the first night in a cold room. Then they are gently pressed and the resulting must ferments with native yeasts at a controlled temperature (17-18ºC). Finally, the wine ages for 6 months in stainless steel tanks before bottling.
