DOMAIN MARGUET
The estate located in Ambonnay is one of the few biodynamic in Champagne, a conversion driven by Benoît Marguet who took charge of the estate around ten years ago. Upon his arrival, Benoît shook up work habits, he introduced biodynamic preparations, phytotherapy (infusion and decoction of medicinal plants) and aromatherapy, and developed tillage on all of the estate's vines using a draft horse. . This work was rewarded in 2013 with the obtaining of Demeter certification, one of the most demanding.
Benoît Marguet is driven by the strong desire to respect the natural balance of things, to serve the living, and to accompany the wine without rushing it. At the estate, it gives an important place to fermentation and aging in wood, from very selected forests, but also very well maintained. The use of sulphites, which are so harmful, becomes very marginal.

The Les Bermonts 2018 vintage produced by Benoît Marguet is an aperitif Blanc de Blancs champagne which will also pair well with shellfish.
This vintage is vinified and aged in oak barrels for 9 months, using native yeasts. Once in the bottle, the vintage spends 4 years in the house's cellars to develop its aromas. This champagne is a brut nature, that is to say without dosage, in order to let the wine and the terroir express themselves fully, without artifice.

Shaman 20 combines Pinot Noir (81%) which brings power and body to the champagne, and complemented by a touch of Chardonnay (19%) which balances the wine with its finesse. The grapes come from the Grands Crus terroirs of Ambonnay and Bouzy, renowned for their exceptional Pinot Noirs.
The number 20 indicates the majority year present in the assemblage. Each harvest being different (here the base year being 2020) this allows us to better understand the influence of the majority vintage on a brut without a year.

Les Beurys 2018 is made from Chardonnay from Grand Cru plots in the locality Les Beurys. The draw took place in June 2019 and the wine was disgorged in March 2023. It is a Brut Nature , without dosage.

Les Bermonts is a locality located in Ambonnay, a Grand Cru village in the Montagne de Reims. It is a plot planted in 1952 only with Chardonnay. These old vines give very expressive grapes thanks in particular to low yields.

This Ambonnay is a Côteaux Champenois Blanc which is 100% Chardonnay. The grapes come from two distinct terroirs classified as Grand Cru, Les Beurys and Les Crayères, located in the commune of Ambonnay. Fermentation takes place spontaneously, with native yeasts. Aging in barrels lasts 19 months. Only 1500 bottles produced.
