It is therefore a perpetual reserve in which the first vintages of the House with wines of the year. This cuvée is made from different plots in the commune of Essoyes, a Côte des Bar terroir essentially made up of clay, which gives grapes with great aromatic intensity, while retaining a beautiful freshness.

The wines are aged in barrels and demi-muids for 9 months, before being bottled. Vinification is carried out with native yeasts from the House's grapes, without fining, without filtration, without added sulphites and without expedition liqueur. This champagne is a Brut Nature, a champagne without dosage, allowing you to appreciate all its purity and natural balance.

This vintage 11,12,13… reveals beautiful notes of citrus, grapefruit and spices such as cinnamon and nutmeg. This wine offers very nice substance and a long mineral finish.

DOMAIN

The estate's vines are part of a complex whole made up of energy which links liquid, solid and gaseous elements together. In all actions on the soil, the vines and the wine, the estate takes into account the environment and its different rhythms.

The estate extends over 4 ha, in Essoyes, on the Bar coast, in Aube on south/south-east facing hillsides. The grapes have been Demeter certified since 2014. Use of light machinery to avoid compacting the soil, spreading of farm compost and horn dung to develop complex microbial life, horn silica, herbal teas, plant decoctions for balance of the vine and the vigor of its natural defense system, braiding of the upper tillers of the vine to no longer top its apices and thus avoid significant stress, disbudding to reduce yields are what the estate does to respect the rules of biodynamics. Great attention is paid to the grapes during the harvest: ripe grapes and sorting at the time of picking. The search for practices that are ever more respectful of living things leads to the spirit of natural wines. To enhance the expression of the terroirs, they produce one vintage per year by separating each plot.
