Nose of yellow-fleshed fruits (apricot, peach, etc.) and white flowers! The Viognier is present and the Clairette softens the blend! On the palate, roundness and volume for this southern wine!
DOMAIN
The first idea is maximum respect for the grapes.
For this, no use of grinding equipment (grounds pump, endless screw).
The grapes are transported by vibrating table and conveyor belt to the concrete vats.
We sulfit only and very lightly after Malo Lactic fermentation if necessary.
Aging takes place in vats for the Spring vintages and in old barrels for the vintages from old vines.
Purity being the always inaccessible and utopian goal of history, we strive to express as closely as possible, in abundance of betrayal, the terroir and the grape, adapting as best as possible to the effects of the vintage. Biodynamic estate since 2010!
