Manual harvest, destemming without crushing with a proportion of whole bunches depending on the vintage. Maceration for around twenty days with little extraction, some punching down and pumping over. Blending of free-run juices and press juices after settling the pressed wines. Aging in rooms for 12 months and 6 months in stainless steel vats. No new wood, only pieces of 1 to 3 wines.
Julien Boiteau, already aware of it through his family and through the 20 years spent in Bourgueil, became passionate about wine through the meetings he talks about (Pierre Jacques Druet, Jean-Michel Comme or even Paul Pontallier whom he met during the 20 years spent as head of culture at "Château-Margaux"). In 2014, he created the house that bears his name on the Charente lands, where one of his grandfathers was a winemaker. He then met Frédéric Basconte-Mennetret, who after finance settled on the hillsides of the Gironde estuary to open a gîte "Le Panorama", while taking part in the harvest, then in the work of the Maison Boiteau cellar. The two men end up combining their skills to develop this company.
Maison Boiteau affirms its desire to produce local wines, coming from limestone hillsides by applying specifications that it describes as rigorous:
* The selection of small plots with a specific terroir worked by winegrowers, who are attached to them.
* Monitoring and carrying out certain work throughout the year.
* A harvest by Maison Boiteau's own teams from selected plots.
