The Marsannay red Les Longeroies comes from one of the famous climats of this appellation. The soils are deep and formed of limestone scree. The goal is not to extract too much material but to favor the fruit and finesse of the wine. Aging takes place in oak barrels and bottling is done if possible without fining or filtration of the wine.
It will improve over a few years (up to 7 to 10 years). It goes well with red meats, feathered game or even cow's milk cheeses.
DOMAIN
Following the winemaking stages in California and Oregon, Cyril joined his parents (Marie-Françoise & Charles) at the family estate in the early 2000s. Thus, the fifth generation enriched the know-how with an international vision. The Charles Audoin estate is 15 hectares, including 14 hectares in the Marsannay appellation. The latter come in a surprising handful of single-plot vintages, reflecting the desire to preserve the typicality of the climates. Cyril cares about subtle wines, local wines...not oenologist wines. The result is long aging, the desire to keep old vintages, and lots of plots!
