An authentic expression of the terroir and the Sangiovese of this south-eastern part of Montalcino, Le Ripi, in just a few years, has established itself as the benchmark for biodynamic Brunello. Born in the early 2000s from the intuition and passion of Francesco Illy, coffee family, the estate conceives biodynamics as a productive philosophy focused on respect for the territory without qualitative compromise. The experiences of the “bonsai vine” demonstrate this, at high density (62,500 plants/hectare), and of the “golden cellar”, based on the proportions of the classic golden ratio and with a circular “pantheon” serving to refining.
