A juicy wine with a lot of precision but also a good dose of instinct. On the nose, small red fruits (raspberry, cherry) and black fruits (blackberry) dominate, enhanced with notes of liquorice and undergrowth. Fruity and well-structured wine, the tannins are silky and elegant. They do not lack roundness under a solid structure, leaving a fruity sensation on the palate.
DOMAIN
Sheiichi Saito was born in China but raised in Japan. He notably created the restaurant La Lune in Beaune. But the idea of becoming a winemaker still floats in his head. After joining the Simon-Bize estate where he will learn his skills while following training at the CFPPA in Beaune. In 2016, he finally decided to take the plunge and created the Petit-Roy estate in Chorey-les-Beaune. With rudimentary equipment, he works his small 1.3 hectare vineyard (plus a little purchasing of grapes, notably for the Côte de Nuits vintage), all organic, and produces his first harvest in 2016. The vines of Sheiichi Saito are grown Biodynamically with the most natural products possible. Vinification is simple with a proportion of whole harvests, and without sulphiting during aging. The wines are immediately accessible, perfectly balanced and of great aromatic richness; wines that transcend the most modest appellations.
