A powerful nose, with a wide aromatic palette of orchard fruits, fig, almond, notes of peony and acacia. Mouth: ample and rich, a vinous Champagne with sublime persistence.
Petraea champagne is produced according to a principle close to that of Solera: each year, the last harvest is added up to 50%. Thus, the wine is composed of all the preceding vintages, in a decreasing proportion. This perpetual reserve was restarted in 2012 organically.
In 2009, Raymond Boulard's three children decided to pursue their professional paths separately. The Maison de Champagne Raymond Boulard therefore no longer exists. Francis Boulard, his wife Jeanne and his daughter Delphine founded the house Champagne Francis Boulard & Fille .
For many years, Francis Boulard had given impetus organic at the Raymond Boulard family estate; some vines have been converted and certified organic. With his daughter Delphine, he can now complete this process towards the most natural champagne wines possible. The goal is to have the entire domain certified in organic farming .
Francis Boulard and his daughter Delphine belong to a family of winegrowers for 6 generations... probably more. The oldest known member of the family was born during the French Revolution in 1792.
