Located in the northern part of the appellation, the climat des Longeroies is a continuation of the “Clos du Roy” which explains its name and is one of the largest climats in Marsannay in terms of size (38.3 hectares) and by reputation.

For the convent estate, this plot of 35 acres with an eastern exposure is the only one planted with Chardonnay, and therefore offers the only white wine from the estate.

This white is produced using the same philosophy as our red (native yeasts, low sulphite levels, no oenological input, etc.). The wines are lightly stirred during aging which will last approximately 15 months. A light fining takes place before bottling.

The balance found between the acidity, fat, and aromatic complexity of this great terroir makes it a very versatile wine that can easily pair with most fish, seafood, cheeses or white meats.

The Domaine du Couvent presents itself as a family property managed by Philippe Chéron and installed in the former convent of Gevrey-Chambertin. This wine estate, with an area of ​​more than 10 hectares, extends over exceptional terroirs exclusively on the Côte de Nuits. Its vineyard forms a mosaic of plots mainly spread across the communes of Gevrey-Chambertin, Chambolle-Musigny and Vougeot; but also in Vosne-Romanée, Nuits-Saint-Georges and Marsannay la Côte. Burgundy represented by its climates designating the different plots of unique vines by their exposure, their geological differences and the work carried out there for centuries, and the basis of our reflection in terms of our viticulture but also our winemaking. The philosophy is to purify our practices so that the style of the winemaker fades in favor of the personality of each terroir and vintage. With patience and humility, the work of each detail contributes to the success of the whole in search of purity, precision and the living character of the wine. The desire to do everything possible to give these old vines the means to express themselves as naturally as possible.
