A rich nose with aromas of yellow fruits (apricot, peach) and candied fruits, honey but also Provencal vegetables (fennel).
On the palate, the wine is ample, rich, fatty, voluminous. A finish with a little bitterness which balances the whole for a great, complex wine!
DOMAIN
Philippe Viret is the current winemaker of the estate and it is the only estate which cultivates its vines on 60 hectares and according to the specifications of Cosmoculture, an agriculture based on the energies of water and geology. A little perched you think? Well no, not really... This method of cultivation is almost similar to biodynamics, farming in common sense peasant mode and which does not impact the estate on its environment!
Vines cultivated with respect and delicacy in this warm terroir of the Rhône valley. Philippe's father built a magnificent cathedral winery there in 1999, around a natural water source. The cave, similar to an Egyptian palace from the outside, was built according to sacred geometry and the golden ratio used by the builders of the Egyptian pyramids. Whether you believe it or not, it's really worth the detour for the eyes and also for the taste buds... The estate has banned all adjuvants and additives from winemaking, with the exception of SO2 with a maximum dose of 20mg/L on the wine growing. The promotion of the land, as well as the qualities and know-how of the people who work it are their values!
