Held in a monopoly by the famous estate, the Clos des Monts Luisants is one of the great prides of the Ponsot estate, so don't miss this great wine. The cuvée produced has a gold color and presents an extremely aromatic nose which announces an equally generous palate. Thus, although round, the latter is balanced by a beautiful minerality and a controlled acidity which gives it good aging potential. By waiting a few years, you will notice notes of honey, quince paste and dried fruits.
We advise you to open this wine at around 12 degrees to fully enjoy it. In terms of pairings, you have no choice: you will enjoy this rack of veal with cream or even these delicious scallops with bacon. If you are more of a poultry person, go for a chicken and mushroom risotto, something to delight your taste buds.
The Ponsot estate is an ardent defender of wines aged in old barrels, as well as grapes harvested at high maturity. Here, little or no sulfur, long aging and total respect for the identity of the soils. Through this search for maturity, the wines appear carnal, of great purity, even if they can flirt with a touch of volatile acidity – thus compensating for the generous maturity of the grape.
