We have selected our two best plots of Chardonnay, with the aim of ensuring alternative vinification (without adding sulphites) for a better expression of the appellation.

Manual harvest. Pressing whole grapes: slowly and at low pressure, for finesse. Dry ice inerting (frozen CO₂). Natural settling (without enzymes), by gravity. Put into barrels by gravity and without aeration. Aging on lees for 12 months. Bottled without filtration. Addition of sulphites in very moderate doses, to guarantee transport and aging.

Feeling of the wine by the winemaker
"The color is quite pale despite the aging in barrels (30% new). The nose is of beautiful complexity, combining minerality, toasted wood, citrus fruits. The palate is pure and well structured. It is an acid/acid balance. salty that calls for food!”
Recommended pairings
This wine will go well with river fish, or abalone (France Haliotis) on festive days. It can be served with a nice roasted Bresse poultry, veal dumplings or a saffron risotto! Finally, it can go as far as cheese: try on a very dry goat cheese.


DOMAIN

Claire Naudin took over Domaine Naudin Ferrand in 1994 to put her stamp on it. Resolutely a fan of sustainable viticulture and integrated production, she refuses standardization and prefers an artisanal approach to sustainable viticulture, with minimal interventionism. Its Burgundian tradition wines, wines of emotion, but also wines of the future, take into account the carbon footprint. Woman winegrower, passionate mother, she wants to pass on her heritage for our greatest pleasure. 

The history of the Domaine begins in 1500 and spans the centuries until today. In 1964 Liliane and Henri got married, three daughters were born from this union and the wine labels bear the name of Henri Naudin-Ferrand. Problem: there will be no man to take over the estate...In 1991 while Henri was planning the dismantling of the estate, Claire, who was finishing her studies, returned with her agricultural engineering diploma in hand to take over the family business.

Today and for more than 20 years, the Naudin estate has been run by a woman and it is a daily challenge. 

After having explored a certain number of techniques in oenology, some of which are called avant-garde (such as micro oxygenation in 1996 - 1997, reverse osmosis in 1999)... After having observed, separated, sampled, analyzed... the different plots of the estate, to finally get to know them a little – or at least start – in their specificities (micro-climates, soils, subsoils, plants, etc.), so as to highlight their strengths and weaknesses , the time has come to take stock, take a step back, and choose!

The conclusion of all this is that we must refuse fate. A great wine, wherever it comes from, is built 365 days a year, from the vines to bottling, thanks to the persevering work of an entire team, motivated by a common goal: to get to the end of things, to dare to believe to the potential of this wine, and daring to give ourselves the means to express it.
