The best Macvin produced in Jura by the brilliant alchemist of Rotalier! A dessert in itself, with notes of candied fruit. Macvin is obtained with 1/3 old Marc du Jura and 2/3 Chardonnay and Savagnin grape juice taken at the start of their fermentation. The whole, which is 17.5% vol. of alc. This Macvin, which has spent around ten years in barrels, takes you into a unique and absolutely irresistible olfactory landscape. Fresh nuts, candied fruit, currants, baked apple, cardamom, nutmeg, a touch of curry, another of vanilla: the bouquet, both complete and very refined, unfolds with grace. Of course, you can enjoy it to accompany a creamy gorgonzola, accompanied by a few walnut kernels, or an apple crisp, but the ideal, from our point of view, is still to enjoy it alone, before or after a good meal. A delight.
Jean-François Ganevat embodies the 14th generation of winegrowers from this family from Rotalier, south of the Jura. The man was cellar master at Jean-Marc Morey in Chassagne-Montrachet before taking over the family business in 1998. The estate converted to Organic Culture the same year then to Biodynamic Culture in 2006. he practices plot selections: one soil, one grape variety = one vintage. The result is that the estate produces 45 vintages per year, but don't panic, everything is good, no... extraordinary. He is the reference for a whole generation of young winegrowers. This estate constitutes one of the major revelations of recent years among Jura wines and its rare production is very popular with enthusiasts.
