Thimothée Stroebel's champagnes come from 1er Cru plots on the Villers-Allerand terroir in Montagne de Reims. 
Thimothée Stroebel is part of the young guard of champagne. 3.5 hectares of organic vines since 2009, low yield < 25hl/ha. It is one of the rare champagnes without added SO2. Peasant agriculture and non-interventionist winemaking. 
The estate includes three grape varieties including 55% Pinot Meunier from fifty-year-old vines which today produce caviar grapes, 30% Pinot Noir partly from old vines, the rest Chardonnay.
