A short distance from the western side of the Highlands lies the Isle of Skye, a succession of jagged reliefs and wind-whipped peat bogs. The small coastal town of Carbost, on the banks of Loch Harport and at the foot of the Cuillins volcanic range, is located in a harsh region battered by winds and sea spray. Talisker, “steep rock” in the Nordic language, is the only distillery on the Isle of Skye and it has a special status in the world of whisky. Its fresh, peaty water does not come from streams or rivers but from the 21 underground springs of Hawk Hill a few steps from the distillery. Its single malt, produced in the traditional way, has a recognizable oily character due to its slow cooling after leaving the stills.
