On the borders of Champagne, an agricultural region renowned for its cereals, a family distillery was created in Soligny-les-Etangs. It is dedicated to the manufacture of malt spirits and French-style whiskeys, close to the earth.
Using barley from plots located a few hundred meters from the distillery, an eau-de-vie with a grain flavor is produced, fully expressing the typicality of its terroir.
In oak barrels from neighboring forests, whether new or having contained wine, the malts mature while absorbing local know-how.
Aube, number of four barrels from the end of summer 2020, a follow-up of a unique journey during the three years of maturation, in barrels specially selected by Soligny in collaboration with Jérôme Fouailly, in order to highlight and develop the uniqueness of this first edition.
Color: orange gold tending to amber, shiny appearance
Nose: aromas of tea, liver, chestnut, honey and cereals with a note of old leather at the bottom of an empty glass
Mouth: flavors of liquorice, straw and bramble
DISTILLERY
The Soligny Distillery was founded in 2020 by Véronique and Vincent Godier, from a family of cereal growers for several generations. Agricultural engineers and former winegrowers in Burgundy, the couple became distillers in Champagne. The distillery is equipped with a 2000 liter Istill still, considered the perfect mix between a Thermomix and a Tesla. Brewing, fermentation and distillation are carried out continuously in this unique production tool.
The first drops of distillate flowed in September 2020. The Soligny distillery only uses new French oak barrels or barrels that have contained white and red Burgundy wine.
The objective is to produce a local eau-de-vie, drawing inspiration from the diversity and precision of each plot, like the greatest wines of Burgundy and Champagne. This approach is enriched by a countryside spirit, close to people and nature.
