Ambassador of Saint-Aubin wines, Olivier Lamy continues to strengthen the reputation of this still little-known appellation. His palette of terroirs and his talent for expressing all their nuances allow him to create magnificent wines, real alternatives to Chassagnes or Meursaults. The whites, from long pressings, are aged in 600L demi-muids with little new wood, which makes them less attractive in their youth. This is why, once out of breeding, they spend more than six months in vats. Olivier Lamy does not claim to be organic but he plows his soil and spends long hours in his vines in order to obtain more concentrated grapes and, above all, better balanced wines. With a much more moderate use of barrels today than at the beginning, he produces wines that are a bit austere when young, but whose density of texture and deep substance are suitable for aging. He settles his juices little in order to limit the doses of sulfur, while his long aging periods slowly give his wines a patina.
