La Croix Dompierreis a blend ofCabernet Sauvignon (85%) and Merlot (15%), grown on a gravel plot and a clay-limestone plot. After the manual harvest, the grapes are destemmed and then sorted. Fermentation takes place in wooden vats with native yeasts.
Attracted by the offshore wind, in search of an evolution in terms of vintage, it was in PAUILLAC, at Château DOMPIERRE, that Michel AROLDI set his sights. The banks of the Gironde estuary, its gravelly ridges, are obviously the obvious choice.
