A golden-colored white wine, Saint-Bris Exogyra Virgula presents sparkling reflections. It gives off scents of ripe fruit, citrus fruits such as pink grapefruit, mango, heady flowers such as old rose and an iodized note. You will discover these aromas of fruit and white spices with a saline minerality on the palate. The plots grow on Kimmeridgian limestone which contains oyster fossils (Exogyra virgula).
Saint-Bris Exogyra Virgula can be enjoyed from a young age at 12/13° and can be kept for at least 5 years. It goes perfectly with fatty fish like trout or tuna, smoked salmon and Thai cuisine.
DOMAIN
Family estate, for which we find the first traces in the 14th century, is located in the wine-growing village of Saint-Bris le Vineux dating from the Middle Ages, it is surrounded by Irancy, Chablis and Auxerre.
In the heart of the vineyards of northern Burgundy in the Yonne department (less than two hours from Paris), the 30-hectare farm extends over the communes of Saint-Bris, Irancy and Chablis.
It was in 1979 that (Ghislaine and Jean-Hugues) took over the family business, they were always keen to pay attention to the land, it is from this respect for the land that the logic of cultivating differently appeared as An evidence. After having adopted the organic farming method for many years, a certification application was submitted to ECOCERT, the estate has been certified since 2001.
In 2005, their son Guilhem and his wife Marie, who have the same respect for the earth, joined the estate which obtained certification in Biodynamics from the DEMETER organization that same year.
For many years, they have worked the vines with respect for the appellations, the consumers, the people who work for the estate and of course the environment with know-how that combines tradition and modernism.
