Sylvain Pataille , based in Marsannay in Coast of Nights is a very talented winemaker and passionate about his profession. His story began in 1999 when he started with only one hectare of vines for rent. Thanks to his know-how and his hard work, he succeeded in making his place in the very competitive field of Burgundy wines. It is in particular thanks to his biodynamic farming methods that Sylvain Pataille allows his very particular terroir to be expressed. He limits his yields to 30 hectoliters per hectare , which allows the grapes to be concentrated as much as possible and therefore gives the wine exceptional aromatics.
A true hard worker, Sylvain Pataille takes care of his vines with unusual care. His determination to give the best of himself in the service of the vineyard is now bearing fruit. He is clearly the best winemaker in the Marsannay appellation and in the process of giving a completely different image of this “little appellation” .
A visionary winemaker who delights wine lovers with an assertive personality.
For him, respect for his soil and the biodiversity is essential. It lets the vine self-regulate according to its cycle and climatic conditions.
Concerning the work in the cellar, he carries out long aging in barrels between 15 and 18 months in order to bring maximum finesse to the material.
Sylvain's wines are in a precise, crystalline style and of great complexity.
