

The Sapience vintage is the first exceptional champagne certified AB. It is a cuvée which combines 50% Chardonnay from the village of Trépail, 25% Pinot Noir from Ambonnay and 25% Pinot Meunier from Cumières.
Vinified and aged in oak barrels for 9 months, Sapience 2010 is a champagne which remarkably highlights the magnificent harmony and energy of the grapes that compose it. It is a cuvée that respects the chalky notes of its birthplace, while emphasizing the pulpy and sappy sensations of the grape.
The estate located in Ambonnay is one of the few biodynamic in Champagne, a conversion driven by Benoît Marguet who took charge of the estate around ten years ago. Upon his arrival, Benoît shook up work habits, he introduced biodynamic preparations, phytotherapy (infusion and decoction of medicinal plants) and aromatherapy, and developed tillage on all of the estate's vines using a draft horse. . This work was rewarded in 2013 with the obtaining of Demeter certification, one of the most demanding.
Benoît Marguet is driven by the strong desire to respect the natural balance of things, to serve the living, and to accompany the wine without rushing it. At the estate, it gives an important place to fermentation and aging in wood, from very selected forests, but also very well maintained. The use of sulphites, which are so harmful, becomes very marginal.
