Fleur d'étoile is a zero-dosage extra-brutvinified without sulfur. Alcoholic fermentation takes place in 228 liter Burgundy barrelsand aging for 99 months on slats. The result is a champagneripe and distinguished, a textured wine with abrilliant color with golden yellow reflections, veryemblematic of the Aube terroir. The nose, clean and aromatic, offers floral and winey aromas. The attack on the palate confirmsthe balance, the mid-palate is characterized byfreshness and acidity, and the finish offersaromas of citron peelwith a beautiful bitterness.
Four generations of winegrowers have succeeded each other at the head of the Fleury house, a pioneer of biodynamics and natural wine in Champagne. Organic has in fact been practiced for around thirty years with Demeter and Biodyvin certifications, and the vines have not seen any herbicide for fifty years. Fleury stands out for its organic and natural vintages of a delicacy typical of the Bar coast, where Pinot Noir dominates, the main grape variety of this Fleur d'étoile vintage with a touch of Chardonnay. The vines grow mainly on Kimmeridgian limestone with a few plots on limestone marl.
