From the Pinots Noirs of the Terroir de Chamery, a terroir classified as Premier Cru in the heart of the Montagne de Reims, the Perseval house produces a Blanc de Noirs champagne which is distinguished by its vinosity, its complexity and its deliciousness.
This cuvée combines 50% Pinot Noir and 50% Pinot Meunier, 20% of this blend was vinified in oak barrels.
It is a cuvée which is not dosed, thus allowing the aromas to express themselves fully. Malolactic fermentation was not carried out on 18% of the blend in order to maintain good freshness. We discover brioche notes on the nose which evolve into aromas of yellow fruits and spices. On the palate, the attack is frank, then reveals more expressive aromas after a few moments. The Blanc de Noirs signed Perseval was produced in 4080 bottles.
Clément Perseval is part of this new generation of Champagne winegrowers, talented and creative! Located in the heart of the Montagne de Reims Natural Park, Clément takes over 2 hectares of the family vines which he signs with his own name before taking everything in hand. Clément does not just inherit his father's land but adapts and becomes a true Champagne artisan. Sensitive to more than sustainable agriculture, he therefore favors biodiversity and favors the native yeasts of his grapes classified as premier cru in the village of Chamery.
His champagnes are in his image, authentic and sincere. In the vineyard Clément Perseval favors biodiversity, and in the cellar, the young winemaker has a natural approach to winemaking. Thus the natural dosage is obtained naturally, thanks to the residual sugar from fermentation. Truly luminous wines full of freshness. Its goal is ultimately to transmit beautiful emotions to us while enhancing all the potential of its terroir that is Chamery!
