The nose is fresh, natural, free, already evocative of tangy red fruits (griotte, plum, redcurrant). The Cossard style is entirely present in this wine. Bedeau is a beautiful, delicious Pinot Noir full of finesse, full of fresh, tangy and satiny fruit in addition to a touch of insolence to enhance the whole. Lively and voluminous, spicy on the palate, with velvety and well-blended tannins. The harvest comes from plots of forty-year-old vines in Volnay and the surrounding area, and from a plot of fifty-year-old vines in Nuits-Saint-Georges. All the soils are clay-limestone. The harvest is macerated in whole clusters before aging in qvevri for 3 to 4 weeks, then a year in barrels.
DOMAIN
Frédéric Cossard created Domaine de Chassorney in 1996 after 10 years of experience as a wine merchant, and today he is recognized as one of the best natural winemakers in Burgundy. Through his entirely natural work, Frédéric Cossard gives voice to the terroirs and Burgundian wines, undistorted by agricultural chemistry. Having observed, during his years of trading, the existence of damaging viticultural practices, the winemaker used this counter-example to practice undenatured viticulture. Thus, he produces vintages of purity and elegance without artifice which are among the most sought-after in Burgundy.
