Once again Gérard Perse wants to be visionary and innovative, the idea is to make a unique wine, from all the Gérard Perse properties, to make an ambitious blend and to offer it with the most prestigious signature: Esprit of Pavia.
Esprit de Pavie is a wine that can be drunk young, as well as after a few years of cellaring. The style is the same claimed by its prestigious elders, fruity, roundness, maturity and balance.
The terroir is located in the extension of the Saint Emilion hill:
- south facing facing the Dordogne
- a sandy-clayey foothill
- a clay hillside on limestone with asterisks
- a limestone plateau under a thin layer of clay
Fermentation begins naturally in thermo-regulated cement and stainless steel vats. After a few weeks of maceration, Malo-lactic fermentation takes place in vats.
Aging in barrels of a wine from Château Pavie and Château Monbousquet for 15 months.
Coming from two different appellations, Esprit de Pavie finds a common base in the AOC Bordeaux appellation.
