One of the references of Chablis. Humeur du Temps is a very pretty wine (assemblage of four plots), distinctive and which drinks too easily... Notes of ripe fruit and white flowers, on the palate there is a balance between roundness and minerality!

Alice and Olivier De Moor produce Chardonnay whites organically. Alice and Olivier De Moor do not like chemistry or chemicals including sulfur. And their wines from the Courgis vines are of immense purity. Alice and Olivier De Moor founded their estate in the early 1990s in Yonne, southwest of Chablis. Through hard work and perseverance, the couple created a 7-hectare vineyard, planted with Chardonnay, Aligoté and Sauvignon in the towns of Chitry, Saint-Bris-le-Vineux and Courgis. Converted to organic viticulture, their different plots are cultivated without synthetic fertilizers or pesticides. A sign of the care taken in the harvest, the harvests are transported in crates to avoid crushing the grapes (cause of oxidation). On the winemaking side, the rule is to intervene as little as possible: no addition of synthetic yeasts during fermentation, no filtration, bottling with a minimum of sulfur... From the Aligoté, of astonishing complexity, to the Chablis, fans are not mistaken: the majority of the production, largely exported, is sold each year even before bottling. A deserved success.
