From the Chardonnays of the Terroir de Chamery, a terroir classified as Premier Cru in the heart of the Montagne de Reims, the Perseval house produces a Blanc de Blancs champagne which is distinguished by its great freshness. It is a cuvée which is not dosed, thus allowing the aromas to express themselves fully.
We discover lemony notes on the nose which evolve into delicious fruity aromas. On the palate, the attack is frank, then reveals more expressive aromas after a few moments. Blanc de Blancs Perseval is produced in 2000 bottles per year.

Clément Perseval is part of this new generation of Champagne winegrowers, talented and creative! Clément does not just inherit his father's land but adapts and becomes a true creator of Champagne. Sensitive to more than sustainable agriculture, favors biodiversity and favors native yeasts.
His champagnes are in his image, authentic and sincere. In the vineyard Clément Perseval favors bio diversity, and in the cellar, the young winemaker has a natural approach to winemaking. Thus the natural dosage is obtained naturally, thanks to the residual sugar from fermentation.
